The mode mediterraneen

About what is it?

Scientists realized in the Sixties that the inhabitants of certain areas (Greece, Crete, Italy of the south) had a longevity higher than the average with rates of cancers and cardiovascular diseases low.

This longevity is the result of a way of life and especially of a particular food. One finds it in other Mediterranean countries (France: Provence Riviera) of which one of the common points is the culture of olive. It joined by certain points what one called the French paradox.

One can summarize the broad outline of this mode:

  • Regular physical exercise but not violent one, very often of the active leisures in the open air (area PACA profits of more than 300 days of sunning per annum).
  • Of great quantity of fruits, vegetables, etc… in short of the plant in abundance if possible of the local products, preferably fresh, little transformed and rich in fibres, antioxydants and others nutriments of vegetable origin.
  • Pastes, cereals, bread daily in moderate quantities.
  • Use mainly of the olive oil in kitchen (to which one knows no harmful effect on health. This primarily monoinsaturée oil supports cardiovascular health, since it increases good cholesterol. Considering its content of vitamin E, it is also antioxydant).
  • Dairy products (especially cheeses and yoghourts) in moderate quantities.
  • Fish (fatty acids omega 3 provides, strongly recommended to preserve cardiac health) and poultries in moderate quantities.
  • Eggs in quantities weak.
  • Red meat once per week.
  • A fresh fruit as serves sometimes pastry makings containing concentrated sugars, of nut, almonds or honey.
  • A moderate wine consumption (2 glasses), preferably during the meals (what also helps to reduce the risks of cardiovascular diseases).
  • Without forgetting the benefits of the nap to keep the form.

The secrecy of this mode is that it is rich in antioxydants which protect the arteries and more generally slow down the ageing of the organization. One finds them in the plants (fruits, vegetables, nuts, cereals complete, tea, etc…), in the wine and olive oil: vitamins E and C, carotenoids and various compounds polyphenolic.
It is in addition low in saturated fatty acids which one especially finds in the livestock products (meats, milks and eggs)

The explanation of the beneficial effects of the Mediterranean mode lies in balance between its various components and the effect of synergy which is exerted between them.

Thus the Mediterranean diet, born before Jesus-Christ, is the modern response to the food interrogations which one is posed today. That Ci seems to us being able to be a current way of life. More than one tendency it is before a a whole philosophy of the life, of which Equilibre, Volupté and Wisdom is the Masters words.

Approach "health"
The virtues of "Mediterranean Diet" and the medical profession which showed its positive action in the fight against the cardiovascular diseases are not foreign with this passion.

Approach "epicurean"
Wellbeing, Gastronomy, Soil, Pleasure. A research of the "greater comfort" and "good-to consume". The consumers, increasingly concerned of a healthy, light food and authenticates readily let themselves allure. The large heads are not remains about it and such Ducasse, Chibois (Fatty), Gedda (Bormes Mimosas) or Robuchon, they do not hesitate to work out receipts around the olive oil, marrying their know-how and the typicity of the vintages.
